Bastille Day Omelet

Bastille Day doesn’t have to be just for Le French folks.  You can enjoy The French National Day in the privacy of your own home.  So, put on your best Chanel, turn on some Édith Piaf, and whip out some corn, eggs, brown sugar, and a bottle of your best Bordeaux!

Serves: 6-8
  • 6 cups of shucked and cooked sweet corn
  • 18 organic eggs
  • 3 tbsp brown sugar
  1. Crack eggs into a bowl and toss out shells
  2. Add eggs, corn, and sugar into a blender and puree
  3. Heat up a skillet and grease lightly
  4. Take batter mix and whisk generously
  5. Once skillet is hot, take ⅓ cup of batter and slowly pour into the skillet
  6. Work batter into a pancake shape and thickness; allow bottom side to firm up
  7. With a wide spatula, flip the omelet over to cook both sides evenly
  8. Once the omelet is ready, put aside and repeat until the batter is gone
  9. Possible toppings: shredded beef, chicken, lettuce, diced tomatoes, and salsa or sour cream
For thicker omelets, add ½ cup of corn starch.
