Homemade Tagliatelle al Ragu di Carne

  • Typical Tuscan Ragu Sauce Ingredients:
  • 1½ cup of diced onion
  • 1½ cup of diced carrot
  • 1½ cup of diced celery
  • 3 pounds of ground pork
  • 4 cups of tomato sauce (or peeled tomatoes)
  • bottle of red wine
  • salt and pepper to taste
  • fresh parsley
  • fresh oreganoHomemade Tagliatelle Ingredients:
  • 600 grams Tipo '00' Flour
  • 6 Eggs
  • 1 tablespoon olive oil
  • Salt to taste
  1. For the Sauce:
  2. In a frying pan, pour a couple tablespoons of olive oil.
  3. Add carrots, celery, and onion.
  4. Cook for a couple minutes.
  5. Add ground pork and half a glass of wine.
  6. Don't cover because the wine needs to evaporate.
  7. Add tomato sauce or peeled tomatoes.
  8. Salt and pepper to taste.
  9. Then add desired amount of fresh parsley and fresh oregano.
  10. Cook for 40 minutes, covering the frying pan on a low heat.For the Tagliatelle:
  11. Pour the flour into a mound on the center of a clean surface.
  12. Create a bowl shape with the flour and add eggs in the center and a couple pinches of salt.
  13. Mix the eggs gently with a fork.
  14. Add olive oil and knead together slowly adding flour little by little until the mixture becomes smooth and compact.
  15. Rub dough lightly with olive oil.
  16. Then place your dough in plastic wrap and refrigerate for 1 hour.
  17. After your dough has chilled, take a small bit of flour and spread it out on a clean, smooth surface.
  18. Take a rolling pin and roll out long, wide sections of dough, as thin as possible
  19. Use a machine or knife to cut into strips of desired width (usually 1 finger width).
  20. Separate the pasta noodles to dry (about 30 minutes).
  21. Once dried, boil pasta with a dash of olive oil and pinch of salt for 4 minutes until cooked (but not mushy).
  22. Strain pasta with cold water so noodles can separate easily.
  23. Dish out desired portions of pasta, add Ragu sauce, and serve.
