Truffle Egg Salad Salad

Truffles just make everything taste better.  But maybe what I like best about them is that truffles take an ordinary recipe and turn it into cuisine fit for a foodie.  Since the art of purchasing great truffles isn’t cheap or easy to come by, I suggest investing in some truffle salt and truffle oil, for those with refined taste and a savvy budget.  Just a hint of truffle goes a long way, and it can transform a simple egg salad into something sensational.




Truffle Egg Salad Salad

Serves: 6-8
  • 6-8 large heirloom tomatoes
  • 16 organic eggs
  • 1 bunch of long green onions
  • 1 small bottle of green olives
  • 1 small package of sunflower sprouts
  • 6 strips of bacon
  • 4 tbsp. of olive oil
  • 4 tbsp. of truffle oil
  • ½ cup of Vegenaise
  • ½ cup of Dijon mustard
  • ¼ cup of Sriracha sauce
  • 1 tbsp. of cayenne pepper
  • truffle salt to taste
  1. Wash tomatoes, onions, and sprouts.
  2. Cut stems & tops of tomatoes off.
  3. Scoop out middle of tomatoes to form small bowls.
  4. Dice onions and olives.
  5. In a small bowl mix together olive oil, truffle oil, Vegenaise, Dijon mustard, Sriracha sauce, and cayenne pepper.

    Cooking Instructions for Eggs
  6. Place eggs in a large pot and cover with water.
  7. Cover pot and bring to a boil.
  8. Allow eggs to cook for 10 minutes, and then remove from burner.
  9. Eggs should cool down for 15 minutes.
  10. Peel shells from eggs.
  11. Rinse eggs with cool water to rid them of any small bits of shell.
  12. Then, place eggs in a large bowl.

    Cooking Instructions for Bacon
  13. Take 3 sheets of paper towels and place strips of bacon on evenly. Add 1 more sheet on top (This allows paper towel to absorb the fat).
  14. Place the paper towels and bacon in the microwave and cook for 3 minutes (or until bacon is crispy).
  15. Allow bacon to cool down for 3 minutes.
  16. Chop up bacon in small, bit-like pieces, and set aside.

  17. With a large fork, take the bowl of eggs and mash them into medium sized pieces.
  18. Add in onions, olives, and bacon.
  19. Fork through mixture.
  20. Lightly pour in sauce, until amount desired is achieved.
  21. Taste and add truffle salt to season.
  22. Mix the salad thoroughly.
  23. Take tomato cups and add sprouts to the bottom for salad portion.
  24. Top off tomato cups with egg salad mixture.
  25. Sprinkle cayenne on top for the perfect presentation.
